Ingredients
· 200g fresh strawberries, hulled and halved
· 100g mixed salad leaves (rocket, spinach, or watercress work well)
· 1 ripe avocado
· 50g feta cheese, crumbled
· A small handful of fresh mint leaves
· 2 tbsp olive oil
· 1 tbsp balsamic vinegar
· 1 tsp honey
· Salt and black pepper
Method
1. Start by washing and preparing your strawberries, then place them in a large bowl with the salad leaves. Roughly tear the mint leaves and add to the bowl.
2. Cut the avocado in half, peel and remove the stone. Slice evenly and add to your salad.
