Welcome to the Sustainable Kitchen. We are so proud and excited to have opened our flagship café in the heart of Bingham (despite the many challenges that the current world situations have thrown our way).
‘The SK’ has been in the making for many years but was finally realised during a gin-filled lockdown. It was born out of frustration over the general lack of quality/plant-based meals available on the high street and in restaurants. Despite Veganism having been around for almost forever and considering the rapidly growing market for sustainability, we felt disappointment with the lack of consideration and especially, the nutrition of the dishes available.
After 22 years working as a professional chef, managing some of London’s high end private members clubs and acquiring a BSc in Human Nutrition, I moved back to Cropwell Butler and set my sights on utilising my skill set by helping people through my nutritional consultancy. As an Associate Registered Nutritionist with the Association for Nutrition – the only register recognised by Public Health England and the NHS – I take a very scientific approach to nutrition but I do also recognise the benefits to some of the more holistic approaches too.
The leading scientists around the world have painted a worrying picture for the future of the planet, so it seemed the responsible thing to do to make The SK as environmentally positive as logistically possible. To name but a few examples, we use renewable energy, shun plastics and source ingredients that aren’t produced by causing large-scale environmental damage or social inequalities. Although we LOVE avocado, don’t expect to see it on our menu but DO expect it to feature seasonal, plant-based and local fine foods. As a chef and nutritionist, the quality, taste and nutrition of the menu is of paramount importance. We intend to make conscientious eating far more inspiring and accessible to the people of the Vale, all whilst enjoying a calm and relaxing environment. If you somehow feel the need to be even more relaxed whilst you’re visiting, then we do have a liquor licence.
With all the conflicting advice on nutrition and misleading lobbying behind sustainability it can, frustratingly, be rather confusing to do what’s best. We believe we’ve done a lot of that hard work for our customers. As a carbon neutral company, we’re also involved with the recreation of natural habitats to help remove carbon from the atmosphere and are aspiring towards being carbon negative as well as environmentally positive.
